Apple Muffins

Feel like a warm treat with your afternoon tea – look no further. These apple and cinnamon muffins are sugar-free and still sweet plus gluten-free and still fluffy and delicious. They definitely hit the spot! They are perfect to serve to guests as a healthy muffin option and can easily be packed into lunchboxes for school or work. Cinnamon is a comforting spice with numerous health qualities. It has a balancing effect on blood sugar levels and is a natural remedy for inflammation. It’s loaded with anti-oxidants, making it essential during the winter months. Have a go at baking these sugar-free, gluten-free muffins for a healthy and delicious afternoon treat.

Ingredients
  

  • 1 egg, beaten
  • ½ cup milk
  • ¼ cup melted coconut oil
  • 2 small apples, peeled, cored and finely chopped
  • 3 tbsp zylitol or sugar substitute
  • cup  glutenfree flour
  • tsp backing powder
  • pinch salt
  • ½ tsp nutmeg
  • 1 tsp cinnamon
  • Oats for decorating (optional)

Method
 

  1. Method
    Preheat the oven to 200C and line a muffin tray.Place egg, sugar, milk and coconut oil in a bowl and beat with a spoon.Add sifted flours, baking powder, salt and spices and mix.Fold in the finely chopped apple until well combined.Spoon into muffin holders.Sprinkle with oats (optional – tastes perfectly good without this too).Bake 30 – 35 minutes or until cooked.Serve warm or cold, as desired.
