Mixed Tomato Salad

This fresh, summery salad is a great accompaniment to a healthy meal. Whether it’s a cottage-cheese stuffed chicken breast, a seared tuna steak, or a tasty beef fillet, this salad does the trick. What I love most is the beautiful colours of the different tomatoes, which add a subtle sweetness to the salad. Tomatoes are vibrant fruits with many health benefits. They are packed with antioxidants as well as vitamins A, C and K. Enjoy this salad on it’s own or as a side and don’t be shy to try it out as a guest-impressing dish.

Ingredients
  

For the salad
  • 50 g Rose tomatoes
  • 100g g Yellow tomatoes
  • 50 g Cherry tomatoes
  • 2 tomatoes, diced
  • 2 spring onion or ¼ red onion, finely sliced
  • 20 ml fresh, flat-leaf parsley, finely chopped
  • 10 capers (optional)
  • 2 handfuls (60g) of fresh micro-greens/green leaves of your choice
For the dessing
  • 50 ml olive oil
  • Juice of 1 lemon
  • 1 clove garlic, finely chopped
  • Salt and Black pepper to taste

Method
 

  1. Method
    For the salad:Mix all the small tomatoes and split into 2 groups.In the first batch, half the tomatoes. The second batch can stay whole. (This gives a lovely depth to the salad and makes it more visually appealing)Place all the tomatoes, capers and spring onion/red onion in a serving dish.
    For the dressing:Combine all ingredients in a small bottle.
    Drizzle dressing over salad ingredients and sprinkle with fresh parsley.Toss and season with salt and pepper.
    When ready to serve, add micro-greens and toss.
